Celtic Heart wins my number one nomination for best and tastiest vegetarian meals but do visit and see what YOU think. It's fun to see what everyone fixes for dinner and I haven't seen a meal yet that I wouldn't want to sit down to and enjoy. With company, of course.

I will enjoy visiting that forum site for some more inspiration. What can be fixed in 20 minutes, when you are really, really tired, and hungry?

When I would come home from the shop with a hungry daughter, I would put on water for noodles, take a sliced up chicken breast from the freezer, put it in a skillet with some vegetables and do a stir fry in the time the noodles cooked. It's probably very similar to what you do too. With different vegetables and spices- we never got tired of our quick meal.
This photo is of Copper River salmon from Alaska grilled in late June. Very memorable because of the great taste but also because a crow tried to steal it.
